Ingredients
Equipment
Notes
- Add everything to one bowl
- Add flour, baking soda, salt, sugar, egg, molasses, and vanilla.
- For spices like ginger and cinnamon, use a measuring spoon and level it for accuracy.
- Melt butter, and add at the end.
- Mix until everything is smooth and fully combined. Use your hands when a spoon gets too difficult.
Baking Process
Now that your dough is mixed, it’s time to tackle the baking process.- Prepare the sheetpan:
- You don’t need to grease the pan, it comes up pretty easily, even though it the dough is spread from corner to corner. You could use parchment paper if you’d prefer.
- Spread the dough:
- Dump all the dough straight onto the sheetpan, then use a spatula (or your hands) to press it into an even layer. Aim for about ½ inch thickness for soft cookies.
- Bake to perfection:
- Preheat your oven to 350°F (175°C) and place the pan on the middle rack for even heat distribution.
- Bake for 10–12 minutes, depending on the thickness. The edges should look firm, but the center will still appear a little soft—it will set as it cools.
- Avoid overbaking, as it can turn your cookies dry and brittle and will be hard to remove from the shettpan.

Ingredients for Sheetpan Gingerbread Cookies
When it comes to baking sheetpan gingerbread cookies, the ingredients you choose can make or break the final result. Using fresh, quality ingredients ensures your cookies have that signature warm, spiced flavor that feels like the holidays in every bite. Below, I’ll walk you through the essentials, from the key dry and wet components to optional add-ins that can take these cookies to the next level.

Ingredients You’ll Need
Sheetpan Gingerbread
Follow this recipe (exact measurements below) to fill the entire sheetpan from corner to corner, like I’ve shone in the pictures. You might want to separate the dry ingredients and wet ingredients in two separate bowls, and incorporate the dry into the wet slowly as your working with a lot of flour! I know it sounds like a lot, but this is going to fill your whole sheetpan after all. You could half this and just fill half your sheetpan if you are short on certain ingredients. It will turn out either way. You can also just roll in your hand a little dough ball, for individual round cookies too, just like you would in any soft cookie recipe. If you’d prefer that, follow my note below!
Roll in your hand individual cookies
MAKE NOTE, I would half this recipe if I was just makinging small round cookies on my sheet pan, sepearting them 2 inches apart. It would make about 20 cookies, give or take, depending how big you like your cookies. However you need to know, this cookie recipe will puff up and give a nice soft chew. So be aware that this isn’t a hard cut-out cookie recipe that will keep its shape. It is so delicious though, and people really like it for its light spiced flavour and that nice soft texture it has. So it will be a win either way you make this!
Sheetpan Gingerbread Cookie Ingredients List
- 5 cups All-purpose flour
- 4 tsp of Baking soda: This helps the cookies rise just enough to keep them soft yet sturdy.
- 1 tsp of Ginger: Use dry or freshly ground ginger for that bold, spicy kick.
- 2 tsp of Cinnamon: A warm, sweet complement to the ginger.
- 1 tsp of Ground cloves & nutmeg: These spices add depth and complexity. A pinch of each goes a long way. In a pinch I’ve used tsp of apple pie spice! It complements all the right notes.
- 1 tsp of Salt: Just a small amount balances the sweetness and enhances all the other flavors.
- 1 and 1/2 cups of Melted Butter: Room temperature butter will not work, you really need your butter warm and melted, so it combines smoothly. Just put it on the stove, in a pot will do, and get it completely melted, not boiling, and pour it in at the last step.
- 2 cups of Sugar: White or brown sugar will work, though dark brown sugar adds a deeper molasses-like flavor. Its moisture also helps with that perfect soft texture.
- 1/2 cup of Molasses: This is the key ingredient for authentic gingerbread. I used unsulphured molasses for a rich, sweeter and smooth taste. Blackstrap molasses is said to be healthier— but it will be very intense in flavour and it’s not for everyone. (Blackstrap molasses is best in bbq sauce though!)
- 2 Eggs: Helps bind everything together. Use a large egg, ideally room temperature, for smoother mixing.
I found mixing all this together with my hands worked best!

Step-by-Step Instructions
Making sheetpan gingerbread cookies is as simple as it is rewarding. With just a few easy steps, you’ll have a warm, spiced treat that’s perfect for sharing—or keeping all to yourself. Let’s break it down so you can breeze through the process and enjoy these delightful cookies with minimal fuss.
Preparation of Ingredients
Start by getting your ingredients prepped and measured. When it comes to baking, precision is everything, so here are some tips to make sure you’re on track.
- Add everything to one bowl
- Add flour, baking soda, salt, sugar, egg, spices, and molasses.
- Melt butter, and add at the end.
- Mix until everything is smooth and fully combined. Use your hands when a spoon gets too difficult.

Baking Process
Now that your dough is mixed, it’s time to tackle the baking process.
- Prepare the sheetpan:

Once baked, remove the sheetpan from the oven and let the cookies sit for at least 10+ minutes in the sheetpan. Once cool enough to remove without the dough breaking, transfer onto a cooling rack. This brief resting period makes them easier to handle the cookies, as they are very soft.
Cooling, Cutting, and Decoration
After baking comes the fun part—cooling and decorating!
- Cool the cookies:
- Let the cookies cool completely in the sheetpan for 10–30 minutes before cutting them. This prevents crumbling and ensures clean cuts.
- Use a knife or a pizza cutter to slice the cookies into squares, triangles, or rectangles. You can even get creative with cookie cutters for festive shapes.

- Decorate to impress:
- Simple icing: Mix powdered sugar with a splash of milk and drizzle it over the cookies. For extra flair, add a pinch of cinnamon or nutmeg to the icing.
- Toppings: Sprinkle crushed peppermint candies, mini chocolate chips, or colored sugar over the icing while it’s still wet.
- Piping designs: If you have extra time, use a piping bag to create patterns or swirls with royal icing.
Not a fan of decorations? No worries. These sheetpan gingerbread cookies are just as delicious plain, with their perfectly spiced flavor and chewy texture. Whether you keep it simple or go all out, you’ll have cookies that taste homemade with a festive touch.
Versatile Cookie
If you’re anything like me, you love a cookie recipe that works for various occasions and preferences. You can roll them into ball or cut them into shapes right from the pan!

Roll, Cut, or Keep It Simple
The beauty of this recipe lies in its flexibility. While the sheetpan method is a time-saver, you can switch things up depending on how you want to serve these cookies:
- Roll into balls: If you prefer the look of traditional cookies, simply roll small portions of the dough into balls before baking. They’ll puff up slightly and bake into perfect ginger-spiced rounds.
- Cut after baking: Stick to the sheetpan approach, but instead of baking and cutting into squares, use cookie cutters to create festive shapes once the dough has cooled. The soft texture of the baked dough makes this process a breeze.
Whichever method you choose, the flavor remains the star—light yet perfectly spiced with a melt-in-your-mouth softness that’s hard to resist.

Perfect for Any Occasion
These cookies shine because they’re adaptable enough for any setting. Here are a few ways to make them work for you:
- Casual family treat: Slice the baked sheetpan cookies into squares and serve them warm with milk or tea. They’re simple, fuss-free, and just what you need for cozy winter evenings.
- Holiday parties: Elevate these cookies by decorating them with icing, sprinkles, or crushed peppermint. They’ll look stunning on a dessert table while delivering that comforting gingerbread taste.
- Edible gifts: Wrap individually cut cookies in cellophane bags tied with ribbon. Their mix of softness and flavor makes them a thoughtful and crowd-pleasing present.
This recipe fits into your life, whether you’re making a quick after-school snack or creating a festive showpiece.

Why It Works Every Time
Consistency is key in baking, and this recipe delivers. Its magic comes from balanced ingredients and a straightforward process that doesn’t overcomplicate things. A few reasons why it’s so reliable:
- Soft texture: The blend of molasses and brown sugar guarantees a chewy, tender bite every single time.
- Balanced spices: The mix of ginger, cinnamon, and optional cloves/nutmeg achieves a warm, perfectly spiced flavor without being overwhelming.
- No chilling required: Unlike some doughs that need to rest in the fridge for hours, this one is ready to bake right away—ideal for busy bakers.
- Easy to customize: Whether you add chocolate chips, nuts, or skip decorations altogether, the cookies still taste incredible.
Put simply, this recipe sets you up for success, even if you don’t bake often.
The star here really is the taste. It’s that unmistakable gingerbread flavor—sweet with just the right amount of spice—that’ll have people lining up for seconds (or thirds). These cookies are more than a treat; they’re a holiday tradition in the making.
